摘要:采用气相色谱-质谱联用(GC-MS)方法测定了5种植物油(花生油、玉米油、葵花籽油、大豆油和茶籽油)中脂肪酸组成。研究了植物油经皂化、甲酯化处理后,用GC-MS方法测定其脂肪酸含量,结果通过NIST05标准谱库检索确定脂肪酸组成,并利用峰面积归一化法确定各成分的百分含量。研究结果表明,5种植物油中,花生油的油酸含量最高(42.81%),但总不饱和脂肪酸(UFA)的含量最低(79.54%);玉米油、葵花籽油和大豆油的总UFA均在80%以上;茶籽油的α-亚麻酸和总UFA含量均为最高,分别占53.06%和90.59%。
The components of fatty acid in 5 kinds of oils, which were peanut oil, corn oil, sunflower oil, soybean oil and tea seed oil, were detemained by GC-MS analysis after the saponification and methyl esterification of the oils. The components of fatty acid were detemained by NIST05 standard spectral library and the percentage composition of the components was determined by peak area normalization method. The result showed that among the five kinds of oils, the content of oleic acid of peanut oil is highest, which was up to 42.81%; while the content of UFA was lowest, which was about 79.54%. The content ofUFA ofcom oil, sunflower oil and corn oil, sunflower oil was above 80~/0. The contents of UFA of both a-linolenic acid and tea seed oil were all above 80%. The contents of UFA and a-linolenic acid were both highest, which were 90.59% and 53.06% accordingly.
