摘要:随着公众对食品的安全卫生和质量要求日益严格,以及对健康营养食品的青睐,先进合理的食品加工技术也越来越多地被人们所关注和推崇。微波技术是近年来食品行业应用的先进技术。对微波技术在食品中的各种应用,如加热、干燥、萃取等及对食品营养成分维生素、蛋白质等造成的影响做了综述。
With the increasingly stringent requirements for food safety and hygiene and food quality by the public,as well as people's flavor in healthy and nutritious food,the advanced reasonable food pro-cessing technology has attracted more and more attentions and praise from people.Microwave tech-nology is the advanced technology applied in food industry in recent years.The effects of various ap-plication of microwave technology in food processing,such as heating,drying,extracting on the nu-trients such as vitamin,protein in food are reviewed.
