摘要：食用菌作为特殊的食材,其丰富的营养价值一直以来都是人们关注的焦点。而羊肚菌作为特殊的珍稀食用菌,不仅味道鲜美,而且还富含丰富的蛋白质、维生素等营养成分,对于人体有着较高的保健价值,同时羊肚菌还具有降血脂、增强人体免疫力、助消化、抗疲劳等多种保健功能,既可以作为营养补充剂,也可以作为营养保健品。而现阶段针对羊肚菌的研究主要集中在种类培植、资源分布、药性分析等方面,很少涉及有关运动员体质的影响。因此,从羊肚菌的营养价值入手,结合运动员特质,深入分析羊肚菌对于运动员体质的影响。
As a special food ingredient, its rich nutritional value has always been the focus of attention. Morchella spp. as a special treasure of wild edible fungi, it is not only delicious, but also rich in protein and vitamins, which have a great impact on the human body. At the same time, Morchella spp. also has a variety of health functions such as reducing blood fat, enhancing human immunity, digestion, and anti-fatigue. It can be used as a nutritional supplement and a nutritional health product. At present, the research on Morchella spp. mainly focuses on the cultivation of species, the distribution of resources, the analysis of medicinal properties, and rarely involves the impact on athletes’ physique. Therefore, through the nutritional value of morel and combines the characteristics of athletes, the effects of morel on athletes’ physical fitness was analyzed.
