摘要:将小米打浆与鲜牛奶相结合制成一种新型奶饮料,解决了由淀粉引起的沉淀、结冻问题,通过正交试验设计,确定了最佳工艺条件米奶比与米水比分别为1:1和1:10,卡拉胶0.03%,白糖5%,在15MPa~18MPa下均质,85℃~90℃杀菌,产品质量稳定。
The study develop a new drink combining the millet which planted in the north of China with milk, and solved the problem of deposition congelation of amylum, and make sure the stability of the production. The experiment conducted with orthogonal test design, confirm the best crafts and technological parameter.The drink will be traditional and have a high nutritional value.
